Preserving red wine with the wine stopper
After serving, reseal immediately—oxidation accelerates as soon as it's opened. Pump 5 to 6 times until the cork resists. Store the bottle upright in a cool place: a cellar at 14-16°C for reds. A tannic red (Bordeaux, Southern Rhône) will keep for 48-72 hours. A light red (Burgundy, Loire): 24-36 hours maximum. A white: 24-48 hours. Before refilling, check that the bottle is still under slight vacuum by pressing the top of the cork—if it gives way easily, the vacuum is no longer effective.
